The front of the Premiere book has a section on the 5 speeds.

Hey Dennis,
I am also doing a dissasembly/inspection of my 5 speed. I have the
Premier book for 700/750, but it only has the 4 spd. If you could send
me a copy of the 5 speed chatper of either book, I would deeply
appreciate it. I do not have your off-list e-mail. Mine is
moore-@triton.net .

I agree that I thought Doc Dave would be the last person asking about
procedures on a loop frame, but even the experts need to review
documentation every now and then. Maybe he can rebuild 4 speeds in his
sleep, but just hasn't worked with the 5s much.

 Dave,
I didn't see any responses to your post, so here's mine. First, I
would have thought you would be WRITING the book on this, not
requesting it! I don't know what you have in the way of books or
manuals, but the book MOTO GUZZI RESTORATION has a chapter entitled
Transmission Gearbox Stripdown, The Haynes book MOTO GUZZI 750, 850 &
1000 V-TWINS OWNERS WORKSHOP MANUAL has a chapter for dismantling &
re-assembly of the 5 speed gearbox. Then there's the Premier Motor
Corp book on 700, 750 & 850cc Operating Handbook for STripping,
Checking and Assembling Operations. Do you have these
books?
If not, and you want a copy of those chapters, let me know off-line by

return email, and I can make you copies. Dennis Jones

Does anyone have a step by step manual or written proceedure for 5
speed assembly?
