Thanks to Fabio Salvioni who sent me this information via email. In Fabio's own words:
I also tackled the seat lettering like we talked about. I messed around with using the original MOTO GUZZI Lettering but couldn't settle on a size or placement I liked. Instead I decided to mix it up and found the font for ambassador from an old Moto Guzzi ad. It might not be the right thing for purist but I'm happy with it. To put it on I attempted a few things. I bought a cheap die cutter (Cricut) from Facebook marketplace. I first tried cutting out a stencil and using it to paint on the lettering with an acrylic leather specific paint I got at Michaels. It turned out terribly so I cleaned it all off with acetone and decided to try using the die cutter to cut a vinyl sticker seeing as the stencil I used stuck so well to the seat. This looked great for a week until it started peeling up. Ultimately I used heat transfer vinyl and applied it with a heat gun and a dough scraper to apply pressure. Turned out pretty good and has held up perfectly for the past month even through rain and a few heat cycles. Pictures are attached, I figured it could be useful info for anyone else attempting the same.
