You need fiber washers on the petcocks, and the addition of teflon
tape wouldn't hurt either. You'll have to experiment to get the
petcocks on each side to point in the right direction when they're
tightened, one side may take 2 or 3 fiber washers, the other side may
take 1 or 4, they also act as spacers.
For the tank, all of the wiring and cables run behind the little
bump above the front mounting bolt on the right side, it's tricky to
feed everything through there without pinching anything. As someone
mentioned, make sure you have all the rubber bushings and spacers in
there, you shouldn't be tightening against the tank and pinching the
flanges together.
Looked at your pics, the bike's coming along great-I like the
fairing and bar end signals, the only way to go as far as I'm concerned.

 5. Smelled gas and realized the left petcock was leaking. Tried to
tighten it, helped a bit but it was still weeping, tried tightening it
more and it wouldn't tighten, felt sort of stripped. I'm draining the
gas now. I guess I need some washers on it? Looks like there is just
some teflon tape on the threads.

Got the tank 2 days ago and installed it. Had some trouble keeping it
straight - as the bolts tighten up, the tank would dip down towards the
left. Played with a bit and it's pretty straight, not perfect, but
it'll do.
